Chocolate Chip Scones


Ingredients


5 ounces Salted Butter (about 2/3 cup)

21 ounces All-purpose flour (about 4 1/2 cups)

5 ounces Sugar (about 2/3 cup)

1/4 cup Baking powder

10 ounces Chocolate chips (about 1 1/4 cups)

7 ounces Double cream (just under 1 cup)

4 ounces Milk (just under 1 cup)

2 Eggs, beaten with a pinch of salt for egg wash


Directions


Rub the butter into the flour in a mixing bowl. Add the sugar and baking powder. Add the chocolate chips and mix the dough until they are evenly distributed.


Add the cream and milk and mix with your scraper until all the ingredients are bound together. Lightly dust your counter with flour and turn the dough out onto it. Press down, then fold it in half, then press down again, fold again, and then repeat, until you have a rough square. Flour the top and bottom of the dough, cover with a lintfree dishtowel, and let rest in a cool place for 15 minutes.


Lightly flour the counter and then roll the dough out to a thickness of 2 1/2 - 3 cm. Brush off any excess flour. With a sharp knife, cut out the scones into squares - about 2 1/2 x 2 1/2 inches (6 x 6 cm).


Lay them on a baking tray, making sure that the scones are not too close together. Roll out any remaining scraps of dough and cut some more scones until you have used all of the dough. 


Glaze the scones with the egg wash. Wait for 2 minutes, then glaze again.


Turn down the heat in the preheated oven to 400°F (200°C) and bake the scones for around 20 minutes until they are well raised, and the top and underside is golden brown.
